Ham refers to a raw meat product or instant meat product that is made from the hind legs or front legs of pigs after being marinated and fermented for a long time under certain climatic conditions. Its scientific name is “dry-cured ham”. In the ham industry, Jinhua ham is unique and has a long history.

As a product trademark named after the city, Jinhua ham is one of the three famous hams in China. It was very famous as early as 1400 years ago during the Northern and Southern Dynasties. According to the National Jinhua Ham Geographical Indication Protection Product Regulations, Jinhua ham refers to the administrative areas of Jinhua City and Quzhou City, Zhejiang Province, which use pig hind legs as raw materials, and are fed between the beginning of winter and the beginning of spring in the lunar calendar. It is a kind of raw meat product processed through nearly 10 months of salting, washing, shaping, fermentation, stacking and other processes.

In the 27th year of Tang Kaiyuan (AD 739), Ningbo-born medical scientist Chen Zangqi wrote “Materia Medica Supplements” for the first time to record “ham is the best for Jinhua”, which has a history of 1283 years of written records.

Jinhua ham is one of the three famous hams in China. It was very famous as early as 1400 years ago during the Northern and Southern Dynasties.

In mid-November this year, the agriculture and Internet research group went to Jinhua City, Zhejiang Province for investigation. As a traditional consumer goods industry that has gone through many years, what is the development momentum of Jinhua ham industry? What development problems are you facing? In the era of e-commerce, how does the ham industry meet and adapt to the consumption needs of young people? Where is the road to industrial transformation and upgrading in the future?

During the visit, the research team found that compared with other hams, Jinhua ham has the following characteristics: First, the traditional raw material of ham is Jinhua “two-headed black” pork. Secondly, Jinhua has a unique geographical and climate environment. Jinhua is located in the eastern part of the Jinheng Basin, surrounded by mountains on all sides. The climate is cold in winter, with abundant rainfall and sunshine in spring, and hot and long summer. Process requirements for dehydration and high-temperature fermentation. In addition, the local ham processing technology that has been passed down for thousands of years ensures the stability and reliability of product quality. At present, a complete set of technology and product standard system has been formed.

However, similar to most traditional consumer goods industries, the development of Jinhua ham industry is also facing the problem of industrial transformation and upgrading. On the one hand, affected by many factors such as changes in the eating habits of young consumers, consumption upgrades, and product structure upgrades in recent years, changes must be made in industrial development. On the other hand, due to economic development and environmental constraints, the number of pigs raised in Jinhua has dropped sharply, especially the number of “two-headed black” pigs that are high-quality raw materials for Jinhua ham has decreased, and the price has risen, which cannot meet the needs of production companies. As a result, pigs used as raw materials for Jinhua ham Most of the legs are transferred outside, which increases the cost risk of the production enterprise.

Feng Chujun, a researcher at the China Economic System Reform Research Association, believes that the future development direction of Jinhua’s ham industry needs to gradually transform into a modern meat processing enterprise, which not only produces ham, but also produces related meat products to meet different market needs. “It is necessary to change the perception of consumers, especially young consumers, on Jinhua ham. When dealing with the relationship between the government and the market, Feng Chujun suggested that the ham industry carry out self-management, give play to the leading function of the ham association, and minimize government intervention. “The government’s supervision of the industry can be implemented by the ham association. The ham association is composed of a large number of ham enterprises, and enterprises are more aware of market trends than government departments.”

“When you are busy, you can work on farming and make ham, and you can spin kapok frequently and raise more pigs.” This is a proverb that has been circulating in the rural areas of Dongyang and Yiwu in Jinhua City, and raising pigs to make ham has been a local rural custom for many years. Ma Xiaozhong, president of the Jinhua Ham Association, told the research group.

Ma Xiaozhong is a native of Dongyang City, Jinhua. He has been engaged in the ham industry since 1981 and has served as the president of the Jinhua Ham Association since 2015. Ma Xiaozhong, who has been in the industry for more than 40 years, believes that “keeping integrity and innovation” is the core of Jinhua ham. What needs to be kept is the ham processing technology that has been handed down for many years, and what needs to be innovated is the new shape that constantly adapts to the development of the times.

Ma Xiaozhong believes that first of all, the raw material of ham is very important. The traditional Jinhua ham is made from the hind legs of Jinhua “two-headed black” pigs. The “two-headed black” pigs have black skin and black hair on the head, neck, buttocks and tail, white skin and white hair on the middle chest, abdomen and limbs, and black at the junction of black and white. Also known as “Panda Pig”, it has a breeding history of more than 1,700 years. The production process of Jinhua ham belongs to the folk curing process. The finished ham is bright in color, red and white, the lean meat is salty and sweet, and the fat meat is fragrant but not greasy.

The second is the modern standard traditional Jinhua ham process, which is the so-called 8 major processes and 48 process steps: 1st raw material selection; 2nd trimming and cutting of leg blanks; ; Seven stacking ripening; Eight finished product inspection. According to Ma Xiaozhong, generally speaking, it takes about 30 days to marinate Jinhua ham, and it can be adjusted appropriately according to the size of the leg. 25-30 days for legs weighing about 6 kg, and 40-50 days for legs weighing 12-15 kg. Jinhua ham curing and processing technology has been included in the national intangible cultural heritage protection list, and its core technologies are “curing with salt” and “fermentation”.

“The salting process is very important.” Ma Xiaozhong said that the traditional curing process of Jinhua ham requires salting six times, which lasts about a month. During the curing process of traditional craft ham, the quality of curing will be affected due to natural climate change. For example, if the temperature is high, the salt consumption will be fast; if the temperature is low, the salt consumption will be slow. In order to master the quality of pickling, the method of turning over the pile every few days is adopted. The ham master judges the actual situation of pickling based on his own experience, so as to correct and compensate for the impact of climate change on the quality of pickled legs.

“Modern people generally don’t like too much salt.” Ma Xiaozhong said that in recent years, Jinhua ham has also made some improvements in the amount of salt added. He introduced that at present, companies such as Jinzi and Huatong have introduced European full-process automatic temperature and humidity control equipment to minimize the impact of the external natural environment on the quality of ham processing. The salting process only adds salt 2-3 times, compared with traditional processes , 2-salt, 3-salt finished product superior product rate has increased significantly.

It is the adherence to traditional crafts for many years that has also made Jinhua’s ham industry enduring. Ma Xiaozhong said that the Jinhua ham industry has its inherent advantages. First, the industry has a high degree of agglomeration. During the investigation, the research team found that there are large private enterprises such as Jinzi, Huatong, and Jinmao in the local area, as well as the newly established “Jinhua Ham” company under the Jinhua Financial Investment Group with a state-owned background, and a series of online sales. More than a dozen small and medium-sized ham processing enterprises, such as Jingyuan, Pahua, Yanrui, etc., have settled in new e-commerce platforms such as Pinduoduo, and are landmark certified brand stores. The second is the brand awareness effect and profound cultural accumulation over the years.

According to the data of the Jinhua Ham Industry Association, as of 2021, there are more than 78 ham enterprises in the administrative area of ​​Jinhua City, all of which have joined the association, with an annual output of about 3 million hams, nearly 10,000 direct and indirect employees, and an annual output value of 1.5 billion yuan The year with the highest annual tax contribution is about 70 million yuan. There are 2 listed companies in the industry, Jinzi Ham Co., Ltd., Zhejiang Huatong Meat Products Co., Ltd.; 2 Chinese famous brands: Jinzi Ham, Xuefang Jiang Ham; 2 Chinese well-known trademarks: Jinzi Ham, Jinhua City “Jinhua Ham” . At present, more than 50 enterprises in Jinhua have obtained the production qualification of Jinhua ham geographical indication products (geographical indication Jinhua ham GB/T19088-2008). In 2007, the certification trademark of “Jinhua Jinhua Ham” was successfully registered. In 2008, “Jinhua Ham Curing Technique” was included in the national intangible cultural heritage protection catalogue. In 2018, the highest production of landmark products was 300,000 pieces.

Zhejiang Jinhua Ham Co., Ltd. (referred to as “Jinhua Ham Company”) is the only state-owned enterprise in the local ham industry. A total of 400,000 hams will be produced in 2021. Zhang Jianneng, general manager of Jinhua Ham Company, told the research group that Jinhua ham is still mainly made of traditional crafts, emphasizing technology rather than machine replacement. “We now have a standard for Jinhua ham, that is, the production cycle from production to storage should not be less than 9 months.”

Zhejiang Province, where Jinhua City is located, is an area with relatively balanced urban and rural development in the country, and has a good foundation for realizing common prosperity. In 2021, the per capita disposable income of urban residents and rural residents in Zhejiang will be 68,487 yuan and 35,247 yuan respectively, and the income ratio of urban and rural residents in Zhejiang will be 1.94. In 2021, the per capita disposable income of urban permanent residents in Jinhua City will be 67,374 yuan, an increase of 9.5%; The per capita disposable income of rural permanent residents was 33,709 yuan, an increase of 11.0%, and the income ratio of urban and rural residents was 1.99. Both are well below the national average of 2.56.

“The development of Jinhua ham industry also highlights the characteristics of Zhejiang.” Only Jinhua ham industry includes Jinhua ham and Huatong meat products, two listed private enterprises. Zhang Qi, an associate professor at the School of Economics of Fudan University, told the research team that the Jinhua ham industry, especially the private enterprises in the industry, has a good overall development momentum, which can be attributed to three reasons.

First, in the entire economic structure of Zhejiang, the private economy is the main one, and the proportion of state-owned enterprises is relatively low. And most of the private enterprises are small and medium-sized enterprises, even small and micro enterprises. These private enterprises are very dynamic and innovative. Driven by the private economy, Zhejiang can maintain a relatively high economic development speed and vitality. At the same time, private enterprises can also create a large number of jobs. Second, the traditional processing technology of Jinhua ham itself is also superior. “For the ham industry, this is a historical endowment resource.” The third is on the boundary between the government and the market, especially in terms of business environment and property rights protection. , Zhejiang is also ranked in the forefront of the country. “This solves the incentive problem for entrepreneurs.”

E-commerce expands new sales channels

At the beginning of this year, the “14th Five-Year” Digital Economy Development Plan issued by the State Council pointed out that “accelerate the promotion of digital industrialization and industrial digitization, and promote the vigorous development of the digital economy.” Among them, the platform economy, which is an important part of the digital economy, is crucial. important. The State Council’s report on the development of the digital economy shows that the national online retail market has ranked first in the world for nine consecutive years, growing from 1.31 trillion yuan in 2012 to 13.1 trillion yuan in 2021, with an average annual growth rate of 29.15%. As a traditional industry, how Jinhua ham improves and develops traditional production methods and production processes to meet market demand is a question that the Jinhua ham industry needs to answer in the new era.

In the era of e-commerce, Jinhua’s ham industry is also actively embracing the Internet. It is understood that 15%-20% of the city’s ham is sold online every year; the sales volume is 225 million to 300 million yuan.

“We are the first to ‘move’ Jinhua ham online.” In 2014, Lou Wang Cong, a sophomore studying at Wenzhou Medical University, met and fell in love with Teng Chuwen. Teng Chuwen’s father, Teng Weihong, has been learning about ham making since he was 19 years old. He has been engaged in related industries for more than 30 years. The father and daughter have different feelings for Jinhua ham.

After smelling the business opportunities in the development of e-commerce, Lou Wangcong decided to open an online store. Lou Wangcong brought new sales outlets, and Teng Chuwen and her father provided high-quality goods. The two sides, with the mentality of trying, launched a big battle for ham to touch the “net”.

In just a few months, the online sales of Jinhua Ham ranked among the top five in its category, with a turnover of over one million, which gave Lou Wangcong confidence. In 2018, under the recommendation of a friend, Lou Wangcong chose to enter the Pinduoduo platform to open the flagship store of Jingyuan Foods. The e-commerce experience accumulated before provides a lot of convenience for operating the store. Because the unique “fighting” mode can not only collect the needs of consumers from all over the country, but also “break the circle” through natural fission to spread word-of-mouth. With development, the peak period can reach 200,000 daily sales, and the products are exported to all parts of the country.

“We are lucky and have seized many opportunities. The operation method of Pinduoduo stores is relatively simple and uncomplicated in e-commerce. The direct delivery from the origin and the platform subsidy model have brought consumers the ultimate cost-effectiveness and brought more benefits to our stores. Many fans.” This also made Teng Weihong, who “just wants to let the children play and play”, look at e-commerce with admiration. It will take more than 50 days to pay. In Lou Wangcong’s view, the e-commerce platform allows customers from far away to taste the taste of Jinhua. Offline, the sales area of ​​Jinhua ham is concentrated in the Yangtze River Delta; on the platform, there are consumers from Xinjiang and Hong Kong who place orders and receive the goods after many twists and turns, just to taste authentic Jinhua ham. In 2021, Lou Wangcong’s online sales will total nearly 15 million yuan.

In order to adapt to the fast pace of e-commerce, Jingyuan’s factory building has been continuously expanded and doubled. “Ten years ago there were only a dozen workers, but now the sales volume is large and the benefits are good. More than 50 people are required to come to work in the factory.” Teng Weihong said, “There are more than 100,000 hams in stock, and sales peak during the Dragon Boat Festival, Mid-Autumn Festival and Spring Festival. , It’s a good choice for gifts.” Pinduoduo’s multi-year goods festival is approaching, and the workers in the factory are working hard to prepare for a new wave of “ham craze”.

Teng Weihong, 54 years old this year, is a senior technician in the ham industry, the director of the village committee of Jiangxipu Natural Village, Langya Teng Village, and the “old housekeeper” for more than 50 workers in the factory. “I thought about not tossing about anymore, but many of them are old workers who have been with them for more than 20 years. They have feelings for making ham together and decided to continue.”

In the digital age, the platform economy has shifted from offline physical places to online Internet, which has also driven the expansion of local local markets to national markets, and transformed from centralized trading hours to flexible and decentralized all-weather unlimited time. Therefore, the platform economy has a more novel and rich connotation. However, based on many years of tradition, Jinhua ham is mainly used in stewed or steamed dishes, or as an ingredient in other main dishes to enhance freshness and flavor. Due to different eating habits in different regions, traditional ham is mostly used for soup. Therefore, the main sales area of ​​Jinhua ham is concentrated in the southeast coast and southern China, and there is very little sales in the north. The rise of the platform economy has gradually opened up wider sales channels for the ham industry.

During the research in Jinhua, the research team found that leading companies in the Jinhua ham industry, such as Jinzi Ham Company and Jinhua Ham Company, have developed online sales models on e-commerce platforms including Pinduoduo. On the other hand, some local manufacturers have also produced “raw ham” or developed some cooked food, thereby expanding the market. Due to various factors, the proportion of online sales of Jinhua ham is also increasing.

As the only state-owned enterprise in the industry, Jinhua Ham Company is also trying to expand e-commerce channels. About 40% of its sales last year were generated online. Since the opening of Jinhua Ham’s official flagship store on Pinduoduo in September 2021, it has attracted the attention of nearly 3,000 people. The platform provides “tens of billions of subsidies” for various styles of whole leg gift boxes in the store, as well as derivative preserved foods such as diced ham and sausages, and provides exclusive traffic support.

Ma Xiaozhong said that the online sales of Jinzi Ham Company also accounted for about 40%, about 180 million yuan, of which the sales of ham products were about 90 million yuan.

The Developmental Problems Faced by Jinhua Ham Industry

Although the Jinhua ham industry is still at the forefront of national development, in the survey conducted by the research group, many companies reported that the overall development speed of the industry is lower than expected, and the sales volume is relatively small, especially compared with the foreign ham industry, there is still a big gap.

The first is the ham raw material. The ham industry has its particularities, such as long production cycle, large capital occupation, and low turnover efficiency. Small and medium-sized enterprises generally have difficulty in capital turnover. In particular, in the past two years, affected by various factors, the price of pork has fluctuated greatly, which has brought great operational risks to ham production enterprises.

“Pork can account for 75% of the cost of a ham.” Zhang Jianneng told the research team that in the process of pork processing, according to the standard traditional process requirements, the loss rate of pork accounted for about 45% of the ham produced. In other words, 1kg of ham can only make 550g of ham. Therefore, once the price of pork fluctuates greatly, it is difficult for many small and medium-sized enterprises to produce in an orderly manner.

“The added value of ham is not high, so it is very sensitive to the price of raw materials.” Zhang Jianneng said frankly. Specifically, the pricing of ham is usually determined by the price of pork when the raw material was purchased in the previous year. If the price of pork is high at the time of purchase, but the price of pork falls the next year, it will be difficult for the ham to sell at a high price, and it may be unsalable. However, if the price of pork was low in the previous year, and the price of pork rose in the second year, the sales of ham would be better.

The local “Two-headed Black” pig is the best raw material for authentic Jinhua ham. However, the “Two-headed Black” pig under the traditional feeding method has the characteristics of slow growth, long slaughter period, and high feeding cost, which leads to a reduction in supply. Available There are fewer and fewer high-quality “two-headed black” legs used for processing Jinhua ham. If the annual output is 4 million, it is estimated to be less than 1% of the total output. Based on the data provided by the Jinhua Municipal Bureau of Agriculture and Rural Affairs, there are 33 large-scale Jinhua “two-headed black” farms in the city, 1 national-level core breeding farm, and 2 provincial-level breeding farms. There are more than 4,800 heads, and nearly 50,000 heads have been slaughtered in total.

Under the background of this unbalanced supply and demand, most Jinhua ham manufacturers will choose to use other pork legs instead. Because most of the ham sources of ham enterprises are scattered, the acquisition channels are not uniform, and there is no stable and reliable supply of leg sources and quality assurance. , leading to uneven quality of ham, taste and fleshy decline.

“Now some ham companies may only be engaged in the purchase of pork, but not in the production of ham.” Ma Xiaozhong also said that because the price of pork fluctuates too much, if the company buys pork at a low price and sells it at a high price, the profit will be much higher than that of engaged in pork production. Ham processing.

Regarding the large fluctuations in pork prices, which keep the cost of ham at a high level, Feng Chujun believes that this is essentially a matter of market demand. If the Jinhua ham industry develops from the current 1.5 billion to 15 billion, the proportion of raw material costs can be reduced through economies of scale.

“Similar to Wagyu in Japan, the unit price of beef is much higher than the price of ordinary beef.” In other words, if ham increases unit price and industrial scale by meeting different market demands and expanding brand awareness, then the cost of raw materials will not be a problem.

Secondly, the traditional processing technology of Jinhua ham is complicated and time-consuming. It usually takes 8-10 months. From November of Lidong to September of the next year, there are complicated and cumbersome materials selection, pickling, and washing in this process. A series of processing procedures such as sun drying and fermentation make it difficult to automate production. In the traditional production process, the production and processing of Jinhua ham needs to be cured for a long time in an environment with low temperature and high humidity. However, the limitation of this harsh production environment has greatly hindered the expansion and efficiency of Jinhua ham production. improve. The second is that Jinhua ham needs to be salted 6 times during the traditional curing process, resulting in a salt content as high as 9%-12%, which is much higher than the salt content of foreign dry-cured ham. It is generally not suitable for direct consumption, and most of them can only be used for condiments. . The high salt content and special taste make it difficult for ham products to enter the market of young consumers, which also limits the marketing of Jinhua ham. Therefore, on the basis of retaining the traditional flavor, it is the only way for Jinhua ham to become bigger and stronger by making great efforts to completely transform and develop the traditional production methods and production techniques of Jinhua ham.

Thirdly, the old face of Jinhua ham enterprise has remained unchanged for thousands of years. Basically, it mainly sells whole legs. The taste is hard and salty. Although some enterprises have been seeking new product development for many years, their market share is not high and they have not formed a competitive advantage. Especially in recent years, European ready-to-eat fermented ham has been introduced into China, triggering a consumption boom. Today, the annual output of Jinhua ham is only about 3 million pieces. Compared with the total sales volume of nearly 100 million pieces of fermented ham in the international market, the development potential of the fermented meat industry is huge, and industrial transformation and development are imminent.

Feng Chujun, a researcher at the China Economic System Reform Research Association, believes that for the Jinhua ham industry, e-commerce is not only a sales platform, but also enables brand traceability and market dynamic monitoring.

The road to transformation and development of Jinhua Ham

Outside of holidays, small pieces of ham products often become the daily choice of consumers. Starting in 2019, the flagship store of Jingyuan Foods began to sell various specifications of ham slices, ham trotters, etc. on the platform, which is convenient for home-made ingredients. Talking about the development direction of Jinhua ham in the future, Ma Xiaozhong believes that one is to make bigger, stronger and deeper traditional cooking ham. Control its salt content to meet the health needs of modern people; expand its application range; research and develop deep-processed products to increase its added value. The first is to grasp the external market dynamics through the traceability of the production place of ham and the traceability of raw materials.
